Recipe: No Carb Chocolate Chip Cookies

I mentioned on Twitter and Facebook that I’d made some no carb, no gluten chocolate chip cookies. A couple of folks asked about the recipe, so here it is:

Ingredients:

1 Cup Flax Seed Meal
1 Cup Splenda
1 stick of butter
salt (to taste)
1.5 Teaspoons of Baking Soda
1 egg
2 Teaspoons of Vanilla
2 Teaspoons of Xanthum Gum
Chocolate Chips (I chop up a Carb Safe Dark Chocolate bar from Trader Joe’s) There are 4 carbs per bar, so at 16 cookies, you’re looking at .25 carbs per cookie.

1) Melt butter in the microwave.
2) Add the Splenda, vanilla then the egg, stir vigorously.
3) Add the Flax Seed Meal, baking soda, and salt. Continue mixing.
4) Add the Xanthum Gum.
5) Add the chips.

Spoon on to a cookie sheet. I usually get 16 fair sized cookies.

Bake at 375 F for 10 minutes, let cool for a minute, then move to cooling rack.

Caution: The Flax Seed Meal offers a lot of fiber.
